Vegetable Manchurian is belongs to specifically Indian Chinese Cuisine. Manchurian is an indian chinese fried food item popular in India due to adaptation of chinese cooking to suit indian taste.
There are two different variety of Vegetable manchurian is popular dry and with gravy.Both had it’s unique taste, both are prepared by using common ingredients like cabbage, carrot, capsicum, spring onion, corn flour and refined flour etc.Dry Vegetable Manchurian is best served as starter and in my home this dish is liked by all.
In this Vegetable Manchurian recipe, I have only added all natural healthy ingredients which make the dish super healthy, I did not added any ajinomoto which is not good for our bones.
For Healthy Version You can bake Vegetable Manchurian Balls, instead of deep fry them. You can bake these balls in airfryer with greasing ½ tsp oil at 180 degree for 15 minutes.these Vegetable Manchurian Balls are equally tasty and crisped as compare to deep fried balls.
In Indo Chinese Cuisine there are some few most popular recipe like, Chili Paneer, Corn Soup, Fried Rice,Hakka Noodles and Vegetable Manchurian.

So, Let’s Start Now,
For Veg Manchurian Balls
Carrot grated – 4 tbsp
Cabbage fine chopped – 4 tbsp
Capsicum fine chopped – 2 tbsp
Green chili fine chopped -1
Maida – 2 tbsp
Cornflour – 2 tbsp
Salt – ½ tsp
Black pepper – ¼ tsp
Ginger garlic paste – 1 tsp
Soya sauce – 1 tsp
Crushed ginger – 1 tsp
Crushed garlic – 1 tsp
Chopped green chili – 1
Chopped Onion – 1 medium
Chopped spring onion – 2 tbsp
Oil – 1 tbsp
Soya sauce – 2 tsp
Chili sauce – 1 tsp
Tomato sauce – 1 tsp
Vinegar – ½ tbsp
Black pepper – ½ tsp
Salt – ¼ tsp
Cornflour – 2 tbsp
Water – 2 cups
Chopped spring onion – 1 tbsp
For making balls
1.Take a bowl, add chopped capsicum, cabbage, carrots, green chili, ginger garlic paste, salt, black pepper, maida, cornflour and soya sauce. Mix properly.
2.Prepare small round shaped balls from the mixture.
3.Heat oil in a wok, deep fry balls on medium flame till golden brown.
4.Transfer fried balls on kitchen paper.Keep aside.
For making gravy
1.Heat oil in a pan, add crushed ginger, garlic, chopped onion,green chilli and spring onion saute for a minute, add soya sauce, chilli sauce, tomato sauce and vinegar,saute these for a minute.
2.Now add 2 cups water, salt, and black pepper. Bring mixture to boil, boil it for 5-7 minutes.
3.Dissolve cornflour in some water and mixed to the gravy, cook it for 3-4 minutes on low flame.
4.Add deep fried manchurian balls and cooked for 5 minutes on slow flame.
5.Off the flame, and transfer the dish to a serving platter, and garnish with spring onions.
6. Relish your yummy Manchurian with fried rice or Hakka noodle

My personal Tips for Vegetable Manchurian: –
1. Do not add water in the vegetable mix while making balls as water from vegetables is enough to bind them.
2. Keep gravy little thin, it may become thick when cool down.
3. Add manchurian balls in gravy just before serving to keep them crispy.
