Vegetable Fried Rice is most famous rice in Chinese Cuisine. This indo chinese dish includes lots of vegetables and sauces which gives it unique taste, flavor and colour.There are many other variety of fried rice too like Schezwan fried rice, Egg fried rice and Corn fried rice.But here I make vegetable fried rice.

 

For making vegetable fried rice I use vegetables like french beans, capsicum, spring onion and carrots. You can add your choice of vegetables when you make fried rice.You can make fried rice from freshly cooked rice or leftover rice too, but always use cool rice for making fried rice, if you add warm rice, the rice will break and become mushy and you can’t get perfect texture.

 

In this recipe I does not use ajinomoto(MSG) due to health issue,we can make good fried rice without using ajinomoto so please avoid it.You can serve Vegetable Fried Rice with your choice of Manchurian like veg manchurian, gobhi manchurian or paneer manchurian.

 

So, Let’s Start Now

 

INGREDIENTS

 

FOR RICE

Basmati rice -1 &1/2 cup
water – 5 cup
Salt – ¼ tsp (as taste)

OTHER INGREDIENTS

Sesame oil or any oil – 2 tbsp
Garlic crushed – 1 tsp
Spring onion chopped – 4 tbsp
Onion chopped – 4 tbsp
French beans chopped – 4 tbsp
Capsicum chopped – 4 tbsp
Carrots chopped – 4 tbsp
Soya sauce – 2 tsp
Red chili sauce – 1 tsp
Vinegar – 1 tsp
Salt – as required
Black pepper – ¼ tsp

METHOD

FOR RICE

1.Boil rice first to make fried rice, boil 5 cups of water in any utensil.
2.When water boils add wash and soaked rice in the water to cook.IMG_0644

4.Keep the rice aside to completely cool down.

FOR Making Fried RICE

1.Heat a wok or a pan add oil, add crushed garlic saute for few seconds, add onion and spring onion whites saute for a minute.IMG_1035IMG_1030
2.Add all chopped veggies,increase the flame and stir fry vegetables on high flame till they almost cooked but remains crunchy and crispy.IMG_1031
3.Add boiled rice, salt and pepper and quickly mixed the rice well.IMG_1032
4.Add Soya sauce, red chili sauce and vinegar, stir fry for few minutes till the sauces coated the fried rice well.IMG_1033IMG_1034

5.Serve vegetable fried rice hot with manchurian.Schezwan-Fried-rice
