Sambar plays an important role in South Indian Cuisine.When we order dosa in restaurent, it is always accompanied by sambar and coconut chutney, but i also liked quick onion tomato chutney which taste quite good too. I will share the recipe of onion tomato chutney and coconut chutney in another post soon.
Sambar is made with lentil as well as lots of veggies which make it so nutritious. The recipe of sambar that I am sharing today is quite easy and quick to prepare.The main taste maker or main ingredient in this recipe is Sambar Powder, which gave really authentic flavour to it.Sambar powder can be prepared at home also, but here I am using MTR sambar masala.
Sambar goes well with dosa, idlis and vada but this recipe goes well with steamed rice too.

Sambar
INGREDIENTS
Arhar(toor) dal – 1 cup
Chopped green chili – 1
Turmeric powder – ¼ tsp
Salt – ½ tsp or as taste
Drumsticks – 1-2
Ladies finger – 4-5
Tomatoes – 2 big
Onions small (shallots) – 8 -10
Pumpkin – 5-6 cubes
Soaked tamarind – 1 big lemon sized
Jaggery – 1 tbsp
Sambar Powder- 1 and ½ tbsp
For Tempering
Pure ghee – 1 tbsp
Mustard seed – ½ tsp
Hing – a pinch
Whole red chilli- 2-3
Red chilli powder – ¼ tsp
Curry leaves – 8-10
Green Coriander chopped – 1 tbsp
METHOD
1.First wash & soaked dal in water for 20 minutes.
2.Boil dals in a pressure cooker with water (2.5 cups) salt, turmeric powder and all vegetables till done, Keep aside.
3.Heat up pure ghee in a pan, add mustard seed and hing till crackle.
4.Add whole red chilli and curry leaves and roast for a few seconds, quickly add boiled dal and stir it.
5.Stir them regularly so that they did not stick to the pan, add some water if it looks thick.
6.Now add tamarind extract and jeggery and bring to a boil.Reduce the heat and let it simmer for 15 minutes, till the rawness of the tamarind disappears.
7.Now add sambar powder and combined well,let it cook for another 10 minutes.
8.In a tadka pan heat ghee or oil.add mustard seed, hing, whole red chilli, curry leaves and some red chilli powder, roast for few seconds and immediately add to sambar.
9.Transfer it to the serving dish and garnish with green coriander leaves.
10.Serve hot with steamed rice, dosa, idli or uttapam.
