Mango Kheer is one of the different recipe in dessert. This creamy mango kheer is flavoured with cardamom, mango pulp and lots of dry fruits.Mango Kheer is like a fusion between traditional kheer and flavoured kheer.
On the occasion of Teej prepared this new flavour Mango kheer instead of regular rice kheer.In Mango kheer firstly made regular rice kheer, cool it completely, then add mango pulp and chilled it in refrigerator. At the time of serving, add some mango chunks and decorate it with fine chopped dry fruits, which makes mango kheer more delicious.Here is my easy step by step recipe.
So, Let’s Start Now,
Milk – 1 litre
Rice – 2 tbsp
Sugar – 2 tbsp
Cardamom powder – ¼ tsp
Mango pulp – 1 cup
Mango chunks – 2 tbsp
Almonds – 5-6
Cashew nuts – 5-6
Pistachios – 7-8
1.Wash & rinse the rice and soaked the rice in enough water for 10 minutes.
2.Heat milk in a heavy bottom pan and let it come to a boil.
3.Now drain the rice and keep aside.
4.Reduce the flame and add the rice,stirring continuously till the boil come,because kheer can be burnt at the bottom.So stirring is compulsory.
5.After a boil you can leave the kheer on a slow flame.On slow flame kheer will become delicious.
6.Now add cardamom powder.
7.The whole process of cooking the rice in the milk takes about 30-35 minutes.
8.You should scrap sides of a pan and add dried milk in the pan.
9.When rice is completely done and mixed well with the milk & milk would be thicken,add sugar.
10.After adding sugar cook for 2-3 minutes & stirring continuously.
11.Switch off the flame & transfer into a serving bowl and cool down completely.
12.Now add mango pulp and mixed it well, refrigerate it till chilled.
13.At the time of serving,add mango chunks and garnish with dry fruit.
