Khasta Dal kachori is delicious, spicy, fried puffed pastry, which filled with spicy urad dal mixture and then deep fried. Kachori should be fried on low flame to have a nice crunch.Khasta kachori is one of the dish you can eat for any meal, serve them as breakfast with potato curry or can be served with green chutney and tamarind chutney as a snack, you can also be served for dinner with chole or aloo dum. It is a complete meal.Kachoris can be stored in airtight containers for a week.
Kachoris has three delicious variants – Dal Kachori, Mawa Kachori and Pyaz ki Kachori, here we make Khasta Dal Kachori.
So, Let’s Start Now,
Dough
Plain flour or maida – 1 cup
Salt – ¼ tsp
Oil – 2 tbsp
Water – ¼ cup or less
Filling
Urad dal – ¼ cup
Fennel seed – 1 tsp
Coriander seed – 1 tsp
Red chilli powder – ½ tsp
Amchoor powder – ½ tsp
Garam masala powder – ¼ tsp
Salt – ½ tsp
Cumin seed – ¼ tsp
Oil – 1 tsp
Hing – 1 pinch
Oil – to fry
METHOD
To Make Dough
1.In a bowl mix flour salt and oil.
2.Add water slowly to knead the dough, the dough should be soft.
3.Cover the dough and let it sit for a rest for 15 minutes.
To Make Filling
1.Wash the dal and soaked for 2 hours.
2.Grind coarsely the soaked dal without water in a mixer grinder.
3.In a pan add oil,cumin seeds and hing powder till crackle.
4.Add dal paste and all the dry spices and saute continuously till the dal changes it’s colour to golden brown.
5.Off the flame and cool the mixture,your filling is ready to fill.
To Make The Kachoris
1.Heat the oil in a wok, Divide the dough into 10 equal parts.
2.Take one part and roll into 3-4 inch circle.Leaving centre little thicker then edges.
3.Place 1 tspof filling in the centre, pull the edges of the dough to wrap the dal filling.
4.Let the filled balls for rest for 5 minutes before rolling.
5.With the help of rolling pin rolled the balls with light hands to 2.5 inch circle.
6.Now fry kachoris on medium low heat ,when they start to puff slowly turn them, fry untill golden brown from both sides.
7.Served hot kachoris with chutney, sauce or aloo curry. This is one of those recipe from which you can impress someone.
