Dal Tadka is very famous in Punjabi Cuisine. Dal tadka is an essential feature while eating out in punjabi restaurant.This dish is can be easily prepared in your own kitchen in very less time and cost made commonly in punjabi families.Boiled dals are cooked in onion-tomato gravy with some spices.
For this dish,you have to be cooked dals very well as they should melt in your mouth, then added it to sauted onion and tomato gravy,with spices like cumin seed, garam masala,red chili powder,coriander powder and amchoor powder. I served this dish with chapati/indian flat bread, you can serve with naan, tandoori roti, lachha parantha or rumali roti.

Dal Tadka
INGREDIENTS
Urad dhuli dal(split white lentil) – 1 cup
Channa dal -¼ cup
Moong dhuli dal(split yellow) – ¼ cup
Chopped green chilli – 2
Ginger garlic paste – 1 tbsp
Turmeric powder – ¼ tsp
Salt – ½ tsp or as taste
Pure ghee – 2 tbsp
Cumin seed – ¼ tsp
Hing – a pinch
Onions chopped- 2
Tomato (make puree) or chopped – 3 big size
Red chilli powder – ¼ tsp
Coriander powder – ¼ tsp
Garam masala powder – ½ tsp
Amchoor powder – ½ tsp
Lemon Juice – 1 tbsp
For Tadka
Butter – 1tbsp
Whole red chilli (broken) – 2
Cumin seeds – ¼ tsp
Degi mirch(type of red chilli) for color – ¼ tsp
For Garnishing
Green Coriander chopped – 1 tbsp
METHOD
1.First wash & soaked all three dals in water for 20 minutes.
2.Boil dals in a pressure cooker with water (3 cups) salt & turmeric powder till done, Keep aside.
3.Heat up pure ghee in a pan, add cumin seed and hing till crackle.
4.Add chopped onions, saute it till translucent, add ginger garlic paste & green chilli cook it till golden brown.
5.Stir them regularly so that they did not stick to the pan, add tomato puree or chopped tomatoes & cook it for few minutes.
6.Now red chillie powder, coriander powder, garam masala powder and amchoor powder.
7.Cook it till the oil separates, add boiled dals with its water and mix it well with tadka.Keep it on slow flames for 10-15 minutes so that dals will soak all the flavours of masala.
8.For tadka, add butter to a pan, add cumin seeds,whole red chilli and degi mirch, cook for 2 seconds, immediately remove from fire and pour tadka on cooked dal.
9.Transfer it to the serving dish and garnish with green coriander leaves.
10.If you like ,you can add 1 tbsp of lemon juice to it.
11. Enjoy your delicious dal tadka with rice, naan, roti or tandoori parantha.
