Dal Fry is very popular indian dal in Punjabi Cuisine. Dal Fry is prepared with arhar dal .Boiled dal are cooked in onion-tomato gravy with some spices.It taste delicious, Dal fry is often served at indian restaurant.The secret of dal fry is butter and kasuri methi, it gives finger licking goodness to the dal.
For this dish,you have to be cooked dal very well as they should melt in your mouth, then added it to sauted onion and tomato gravy,with spices like cumin seed, garam masala,red chili powder,coriander powder,kasuri methi and amchoor powder. I served this dish with chapati/indian flat bread, you can serve with naan, tandoori roti, lachha parantha or rumali roti.

Dal Fry
INGREDIENTS
Arhar(toor) dal -¾ cup
Chopped green chilli – 2
Ginger garlic paste – 1 tbsp
Turmeric powder – ¼ tsp
Salt – ½ tsp or as taste
Pure ghee – 2 tbsp
Cumin seed – ¼ tsp
Hing – a pinch
Onions chopped- 2
Tomato chopped – 3 big size
Red chilli powder – ¼ tsp
Coriander powder – ¼ tsp
Garam masala powder – ½ tsp
Kasuri Methi – ¼ tsp
Amchoor powder – ½ tsp
Lemon Juice – 1 tbsp
For Garnishing
Green Coriander chopped – 1 tbsp
Butter – 1 tbsp
METHOD
1.First wash & soaked all three dals in water for 20 minutes.
2.Boil dals in a pressure cooker with water (2.5 cups) salt & turmeric powder till done, Keep aside.
3.Heat up pure ghee in a pan, add cumin seed and hing till crackle.
4.Add chopped onions, saute it till translucent,add whole red chilli, ginger garlic paste & green chilli cook it till golden brown.
5.Stir them regularly so that they did not stick to the pan, add chopped tomatoes & cook it for few minutes.
6.Now red chillie powder, coriander powder, garam masala powder and amchoor powder.
7.Lastly crush kasuri methi on the palms of your hands and add them to the dal.It gives awesome flavour to the dal.
7.Cook it till the oil separates, add boiled dals with its water and mix it well with tadka.Keep it on slow flames for 10-15 minutes so that dals will soak all the flavours of masala.
8.Transfer it to the serving dish and garnish with green coriander leaves and butter.
10.If you like ,you can add 1 tbsp of lemon juice to it.
11. Enjoy your delicious dal fry with rice, naan, roti or tandoori parantha.
