Christmas has come and today I baked a Rich Christmas Dry Fruit Cake  with caramel, and it comes out just awesome. The cake come out to be soft, moist, aromatic and too much delicious.In Christmas dry fruit cake generally dry fruits are soaked in rum for days, but in this recipe I soaked dry fruits in caramel syrup made with brown sugar, brown sugar gives the cake a nice dark brown color.


The spices like cinnamon, nutmeg, cloves and ginger powder give slightly spicy touch to the cake.Lemon zest gives it aromatic taste and nuts and dry fruit make it rich and healthy.I used wheat flour instead of refined flour(maida) for health reason, so in my opinion this recipe is perfect from every expect.

Here is my easy step by step recipe.


So, Let’s Start Now,

Wheat flour – 1 cup
Butter or oil – ¼ cup
Brown sugar – ½ cup
Milk – ¼ cup
Regular sugar – 2 tbsp
Dry fruit – 1 ½ cup(walnut,almonds, cashew nut, raisins, cranberry and tutty fruity)
Spice mix – 1 tbsp(Cinnamon stick 1, cloves 2,nutmeg powder ½ tsp and ginger powder ½ tsp)
Baking powder – ½ tsp
Baking soda – ½ tsp
Lemon zest – ½ tsp
Vanilla extract -1 tsp


1.Take all dry fruits in a bowl, chop them and keep aside.
2.In a non stick pan take brown sugar and heat it on low flame without adding any water.
3.Keep stirring till the sugar melts and get dark in color.
4.When smooth shiny syrup is formed add ½ cup water.
5.When the boil comes and caramel is dissolved in water, add chopped nuts and cook for 2-3 minutes.
6. Off the flame and allow dry fruits to soak in caramel syrup for 1 hour.
7.Sieve the flour with spice mix, baking powder and baking soda in a bowl.
8.In other bowl mix milk, sugar and melted butter well.
9.Now mix all dry ingredients with wet ingredients, vanilla extract and lemon zest.
10.Mix everything very well until the batter is without any lumps.
11.Transfer the batter in a greased cake pan and tap well to remove the air.
12.Bake the cake in preheated oven at 180 degree Celsius for 20 – 25 minutes or until the knife comes out clean.
13.Allow the cake to cool down completely, remove from edges and flip the cake on the board.
14.Slice the cake and enjoy.
